What's on the Menu? This can be a challenge! We don't always eat the way our parents eat. Often, they should not be eating the way they eat either. I have had people say to me that they don't want to give up their way of eating and that they would rather die happy. It does not always work that way. Eating unhealthy food can cause heart disease, diabetes, arthritis, migraines, nausea, diarrhea, and a myriad of other issues. Usually people don't just drop dead with a smile on their face while eating some amazing fried chicken from their favorite fast food dive. Instead, they suffer: doctor visits, bills, pills, financial distress, side effects, heart attacks, stroke, dialysis and amputations from diabetes. Meanwhile, the family suffers too. All this for artificial flavors, colors and preservatives. You might think that food is just "to die for!" , but, healthy food can be delicious too.
Eggs Your Way - Eggs are great for brain health. While everyone was so concerned about lowering fats in the diet, they missed the fact that fats are essential for brain health. Without fats, many foods are unpalatable, so manufacturers increased the sugar which is a substance that is toxic to the body. So for brain/memory health we need to increase the fats and decrease the sugar.
Veggie Omelet- Sautee Veggies such as cooked broccoli, or spinach, and onion. Then pour beaten eggs over veggies. Before folding add shredded cheese if desired. It can be topped with Brucetta or salsa.
New Fashioned Waffles or Pancakes
1 cup almond flour
1 eggs beaten
2/3 cup coconut milk
1 tablespoon coconut oil
1/4 teaspoon Redmond salt
1 teaspoon baking powder
1 tablespoon tapioca starch or arrowroot powder (optional)
1/2 ripe banana (optional)
1 teaspoon vanilla
Top with fresh berries and drizzle with vanilla yogurt instead of syrup. If syrup is desired; use honey or real maple syrup.
Keep in mind for brain health and healthy blood sugar levels; we want to keep sugar low, and nutrients up.
